Peanut butter is not very common in India, but lately it is easily available. I tasted peanut butter for the first time about two years back and I loved it so much that I phoned all my close friends to taste it .The entire jar was over in few days as I used to eat scoops and scoops of peanut butter. I wanted to make something out of peanut butter so hopped to Godrej Nature's Basket to buy Skippy 's extra crunchy peanut butter . That done, the next step was to find a recipe , which I find most tiring. I found one perfect recipe of chocolate peanut butter cookie with a cake like texture. I noted down the recipe deciding to make it the next day as it was already almost midnight. Animesh had to leave for airport to receive my sis-in-law and I had 30 mins all to myself. But then, I was itching to make them. As soon as he left, I quickly took out my baking equipments to make these cookies. I loved the crunchiness of the peanut butter in these cookies and I am going to make them again .:-)

Ingredients
1 1/2 cups All Purpose flour
1/2 cup unsweetened cocoa powder
1/2 tsp. baking soda
1/2 cup butter,softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
3/4 cup crunchy peanut butter
1 egg
1 tbsp. milk
1 tsp. vanilla
3/4 cup powdered sugar
2 tbsp. granulated sugar
Preparation
- Sift flour, cocoa powder and baking soda and keep aside.
- In large mixing bowl, combine butter, the 1/2 cup granulated sugar, brown sugar and 1/4 cup peanut butter. Beat on medium til combined.
- Add egg, milk and vanilla, beat well.
- Beat in flour mixture till it forms a dough.
- Shape dough into 32 balls. Set aside.
- Make filling by combining powdered sugar and remaining 1/2 cup peanut butter .Shape into 32 balls smaller in size than the flour balls.
- Preheat oven to 350F.
- Flatten chocolate balls with a sugar coated glass bottom to avoid sticking .
- Place a peanut butter ball on top of each. Completely cover filling ball with chocolate ball.
- Put 2tbsp granulated sugar on an ungreased baking sheet. Place cookies on ungreased cookie sheet 2 inches apart.
- Flatten each stuffed balls again with the a sugar coated glass bottom.
- Bake 8 minutes.Let them stay on the sheet 1 minute. Then transfer to wire rack to cool completely.I am still not very sure if a cookie is done, so I increased baking time by few minutes.
