Chicken Kebab Masala

 
Here comes another one from my dear Mr. Sinfoodie. He entered into the kitchen to fry some seekh kebabs and then was struck with an idea to convert it into a gravy recipe somewhat on the lines of chicken tikka masala. I am not too fond of seekh kebabs, but this was a nice twist and I loved it.

Ingredients
Chicken Seekh Kebabs - 2 Rolls,cut into 1 cm slices
Onion grated - 1 Large
Tomato finely chopped - 2
Ginger garlic paste - 1 tbsp
Onion -1 small , cut and peeled into 1 square inch
Capsicum -1 small, cut and deseeded into 1 square inch
Tomato -1 small , cut  and pulp removed1 square inch
Lemon  -1
Green Cardamom 2
Black cardmom -2
Bay Leaves -2
Cinnamon stick -1 inch
Cumin Seeds -1 tsp
Turmeric Powder - 1 tsp
Coriander Powder -1 tsp
Kashmiri Red Chili Powder - 2 tsp
Chili Powder - 1 tsp
Garam Masala - 1tsp
Salt  to taste
Cashewnut paste - 2 tbsp
Cream - 3 tbsp
Coriander leaves for garnishing
Oil

Preparation

  1. Heat  1 tbsp oil in a pan.  Fry the kebabs for few minutes till it is slightly brown. Keep aside.
  2. Heat  2 tbsp oil in  the pan. Add green and black cardamom, cinnamon stick, bay leaves and cumin seeds and fry till the cumin seeds splutters.
  3. Add  grated onions and ginger garlic paste. Fry till the onions are translucent.
  4. Add finely chopped tomatoes, turmeric powder, coriander powder,red chilli powders  and salt and cook till tomatoes turn into a puree.
  5. Add Cashwenut paste and cook for another 2-3 minutes.
  6. Add the kebab pieces and cook for 5 minutes.
  7. Add chopped onions and let it simmer for few minutes.
  8. Add cream ,chopped capsicum and chopped tomatoes,juice of 1 lemon and let it simmer for 2 minutes. 
  9. Add Garam masala powder and turn off the stove.
  10. Garnish with Coriander leaves and server hot with Rotis or Naans.

Chicken Spaghetti

Husband cooked this for dinner few days back.. And I am yet to get out the recipe from him. This is his own experiment and was a very delicious one !! I don't know what to call it, so simply calling it chicken spaghetti.

Before he forgets what ingredients he had used ,here is the recipe.
For oregano and thyme,please increase/decrease the quantity according to your taste, because he added some more after tasting during making it.

Ingredients

Chicken breast -1 piece, Sliced into thin strips
4-5 Mushroom
1 Small Broccoli
1 Bell pepper -Red and Yellow each

2 tsp oregano + some more
1 tsp thyme  + some more
1 tsp black pepper powder

3 Tomatoes chopped
1 tbsp garlic paste
Salt to taste
 1/2 cup Cream
3 Processed Amul Cheese cubes grated
Chopped parsley - 1 tbsp
Olive oil
Spaghetti -  cooked  as per instructions on the package

Preparation
  1. Heat 1 tbsp Olive oil . Add chicken along with thyme and oregano.  Saute it for 5 minutes. Keep aside.
  2. To make the tomato sauce. Heat 1 tsp oil . Add garlic paste ,chopped tomato .Cook till it softens and is puree like .Take off the stove and keep aside.
  3. Saute all veggies for few minutes . 
  4. Add salt, black pepper powder, oregano, thyme.
  5. Add tomato sauce made earlier and stir for some time. 
  6. Add chicken,cream , grated cheese and chilly flakes and cook for 10 minutes.
  7. To serve, pour it over the spaghetti.

Chicken Shawarma

On public demand here comes the first recipe from Animesh. Not that he hasn't cooked  all this while since the blog has started, but it is very difficult to coax him to  photograph and compile his recipes. Finally after lot of pestering he agreed. And just after the photo-shoot ended, the duration of which was only 5 minutes , both of us attacked the dish and within minutes we ate up all that was made and were still licking our fingers. For a long time we avoided the plain looking hummus available in the food-courts. But it took us one bite to become ardent fans. Since it is something that is made from ingredients very common in India, we had to make this and the results were great.All the flavors of the Shawarma were distinct and very close to the authentic Mideastern food that you get in restaurants here.       Before cooking this you need to plan ahead. Soak the chickpeas in advance ,marinate the chicken overnight[optional] and you can even make hummus one day before.

 Chicken Shawarma Ingredients

  • 250gms boneless chicken cut into thin stripes
  • 3-4 TBSP plain curd/yogurt
  • 1/2 tsp vinegar
  • 2 cloves garlic, crushed
  • 1 teaspoon pepper
  • 1/2 teaspoon salt
  • 2 small cardamom pods
  • 1 lemon juice
  • 1 TBSP Olive Oil  
Hummus: See recipe Hummus and Tahini Sauce Recipe:

For Bread and Vegetables
  • 2 large Pita bread or flat homemade bread[ slighter thicker than rotis]
  • chopped/sliced capsicum
  • thinly sliced Onions
  • chopped/thinly sliced tomatoes
  • chopped  coriander leaves/parsley
  • salt as per taste

Preparation

  1. Combine all ingredients under Chicken Stuffing and marinate for minimum an hour and maximum overnight.Cover and refrigerate for marination.
  2. In a pan, cook marinated chicken over medium heat for 45 minutes or until done.Add a tbsp of water if it is too dry whenever needed.
  3. Mix the capsicum,onions, tomatoes,coriander leaves/parsley  and salt and mix well.
Assembling the Shawarma
  1. Warm the bread.
  2. Place chicken on the bread.
  3. Add veggies and pour Hummus over it. 
  4. Roll and serve with a bowl of hummus.

Creamy Corn Chicken



Guess what!! This is the first time I cooked chicken independently. If I recall well, the last time was when I must have assisted my mom around,  15 years back. Then I moved to PGs and hostels and later on I turned vegetarian for around 8 or 9 years. I have started eating chicken again since last 2 years but never cooked it as it has been Animesh's specialty :-) Yesterday night he thawed the chicken ,but was very tired after office. And as blogging has invigorated me, I want to try my hand at everything I can eat and taste . So,I ruffled through the easy chicken recipe booklet ,rejected most of the recipes outright,because the ingredients were not at home and some of them might not be even available easily in market. I modified this recipe according to what was at home.I have used coriander leaves instead of Parsley as it was not available at home but Parsley is any day more flavorful than coriander. The original recipe has bacon too.But  I don't eat bacon,mutton ,lamb..etc etc. The original recipe didn't have any salt,oregano,pepper,chili too!! 

Ingredients

2 tbsp Olive Oil
2 Chicken breasts
30 gm Butter
1 Onion finely chopped
6-7 Garlic cloves crushed
1 Red pepper,chopped [I have used yellow]
1 and 1/2 tbsp All purpose flour
200 ml Milk
50 ml Cream
200 gms Corn kernels boiled
Handful of  Parsley [I have used  coriander leaves]
1tbsp Oregano
1 tsp Chili flakes
Salt  as per taste
1 tsp Freshly ground peppercorns
Preparation
  1. Marinade chicken in salt ,half of crushed garlic,1 tbsp oil for 30 mins.
  2. Preheat Oven to 200 C.
  3. Heat 1 tbsp oil in a pan over medium-high heat.
  4. Add chicken breast and cook till it is golden on on  both the sides. Set aside.
  5. Clean /wipe the pan and add butter.
  6. Add onions and leftover garlic. Cook till it softens
  7. Add red/yellow pepper and fry for 2-3 mins till it softens.
  8. Add flour and cook for 1 min. Add milk slowly and keep stirring so that no lumps are formed.
  9. Add cream.
  10. If the mixture is too runny,increase the heat,it will eventually become thick.
  11. Add corn kernels,parsley,oregano,some more salt and ground peppercorns.
  12. Pour this mixture in a baking dish and place chicken on top of it.
  13. Bake for 25 mins till the chicken is cooked.
  14. Sprinkle more oregano and chili flakes before you serve.
  15. I served it with spaghetti.
